French Zucchini Flan Recipe

An easy zucchini flan recipe from France. (Flan de courgettes.)

Ingredients
  

  • 4 medium-sized zucchinis (courgettes)
  • 6 eggs
  • 15 cl of milk semi-skimmed
  • 100 g of shredded gruyère cheese or parmesan
  • handful of chopped basil leaves around 20 leaves
  • pinch of salt and pepper
  • pinch of paprika (optional)
  • 1/2 cup of olive oil

Instructions
 

  • Wash and cut the zucchini (courgettes) into small cubes.
  • Add some oil to a saucepan and lightly look the zucchini on medium heat for 10 minutes.
  • Bat the eggs in a large bowl, and add some salt and pepper.
  • Add the milk, basil leaves, cheese, and (optional) paprika into the bowl and stir.
  • Add the cooked zucchini into the bowl and stir.
  • Oil the baking dish lightly.
  • Add the mixture to the baking dish and place in a preheated oven for 30 à 35 minutes à 180°C (350°F).
  • Test that it is cooked with a knife.
  • Once cooked, take out of oven and serve while warm.

Notes

Add a pinch of cayenne pepper if you want the zucchini flan to have a bit more kick.
