How to make these roasted chicken thighs in a spice and herb rub
- Mix the spices: In a large mixing bowl, combine all the spices until evenly blended.
- Season the chicken: Add the chicken thighs and rub each piece generously with the spice mixture, making sure they’re well coated.
- Marinate briefly: Place the chicken in the fridge for 10 minutes to let the flavors sink in.
- Preheat the oven: Heat the oven to 400°F (200°C).
- Roast the chicken: Arrange the chicken in a cooking tray and bake for about 35 minutes, turning every 10 minutes, until golden brown and fully cooked through.
- Serve warm with a slice of lemon for a fresh kick.

This roasted chicken can be served with just about any side like these sautéed lyonnaise potatoes or a mushroom and pasta gratin. It can also be served with a sauce like this French mayonnaise.

What drinks to serve with it?
For drinks, you can pair this savory roasted chicken with a white wine from Burgundy like Chablis.

How to store it?
This savory roasted chicken can easily be prepared in advance and kept in the fridge for a few days. Let it cool, and then place in an airtight glass container so that it doesn’t dry out.
If you want to freeze it, I recommend doing so before the chicken is cooked. Place the marinade and the chicken drumsticks in a large freezer bag, and lay the drumsticks flat in the freezer (not lying on top of each other).
