How to cook these crispy parmesan roast potatoes
- Prep the potatoes: Wash, peel (optional), and slice the potatoes into thin, even rounds.
- Assemble the base: Grease a casserole dish with butter and layer the potato slices neatly. Add any optional ingredients like the cooked bacon between the layers.
- First bake: Place in a preheated oven at 400°F (200°C) and cook for about 25 minutes, until the potatoes start to soften and lightly brown.
- Make the topping mix: In a bowl, combine garlic, parmesan, paprika, salt, pepper, and any remaining melted butter. Mix well.
- Add the topping: Remove the dish from the oven and spread the parmesan mixture evenly over the potatoes.
- Garnish: Add a few parsley leaves on top for color.
- Second bake: Return to the oven and cook for another 25 minutes at 400°F (200°C), until golden, bubbling, and fully cooked through.
- Serve warm.

- Pinch of salt and pepper to taste
Optional
- 2 cups of pre-cooked chopped bacon or lardons
Instructions
- Wash and peel the potatoes and chop into thin round slices.
- Grease the casserole dish with butter and layer the sliced potatoes across.
- Add any optional ingredients (smoked ham, etc) in between the potato slices.
- Cook in preheated oven for 25 minutes at 200C° (400F°) until potatoes and cheese are lightly browned.
- While waiting, mix garlic, parmesan, paprika, salt and pepper in a bowl, along with any remaining melted butter.
- Once the 35 minutes of cooking is done, add the parmesan mixture over the top of the potatoes in the casserole.
- Add a few leaves of parsley on top for decoration.
- Continue cooking in oven for 25 minutes at 400F° ( 200C°) until potatoes and cheese are lightly browned.
- Serve while warm.

What to serve with it?
These parmesan potatoes make an excellent side dish with a piece of meat like roasted veal, lamb roast, or a sizzled pork chop.
You can also serve with a side of vegetables like steamed green beans or bohemian aubergines.

How to store it?
This parmesan potatoes can be prepared in advance, and kept in the fridge. But I wouldn’t really recommend freezing it because the cheesy sauce will retain water.
