Why we love it

Provencal cuisine is renowned for its fresh, vibrant flavors that perfectly capture the essence of sunshine on the Mediterranean coast. One lovely dish that exemplifies this cuisine is the Provencal salad, a delectable combination of olives, cherry tomatoes, and feta cheese.

This salad is simple yet packed with flavor, making it an easy dish to pair with any sort of meal. Black olives and olive oil are a staple of provencal cuisine, and for good reason. They add a salty and rich flavor that are offset by sweet and tangy cherry tomatoes that also add a burst of color.

And the feta cheese acts as the perfect finishing touch. Made from sheep’s milk, feta is deliciously salty, crumbling easily and making it a great addition to any salad.

When combined, these ingredients create a harmony of flavors that is hard to resist. The salad is also incredibly versatile and can be adapted to suit different tastes and preferences.

You add additional vegetables, such as cucumbers or red onions to make the salad even more flavorful. It a perfect choice for busy weeknights or lazy weekends when you want something fast and healthy.

What to serve with it?

This Provencal salad goes wonderfully as a starter or side dish with a meat dish that is rich in flavor.

Try a chicken provençale or pork tenderloin, or even a light boursin pasta.

What drinks to serve with it?

You can pair a provencal salad with a light rosé from Provence or the Côtes du Rhône to keep with the Mediterranean theme. You can read more about French wines here.

Can you prepare it in advance?

Yes, you can prepare this provencal salad at least a few hours in advance, but I would recommend keeping the salad and the dressing separately in the fridge.

When ready to serve, take out of the fridge to bring to room temperature (around 20 minutes) and then combine the dressing with the salad.
