When ready to serve, take out of the fridge to bring to room temperature (around 20 minutes) and then combine the dressing with the salad.
Provencal salad with olives and feta
An easy provencal salad with mixed greens, olives, feta and a red wine vinaigrette that can be served as a starter or a side dish.
Ingredients
- 5oz bag of mixed greens
- 8-10 chopped cherry tomatoes
- 8-10 chopped black olives
- 1 tablespoon of olive oil
- 2 tablespoons of red wine vinegar
- 200g (3/4 cup) of feta cheese
- (Optional) 1/2 red onion
- pinch of salt and pepper
Instructions
- In a small bowl, prepare the dressing by mixing the olive oil and rice wine vinegar, along with the salt and pepper.
- Chop the feta, red onion, olives, and cherry tomatoes into small pieces.
- In a large salad bowl, combine mixed greens with all the ingredients including the dressing.
- Toss the salad to make sure that the dressing coats evenly.
- Serve when ready.
