Smoked Salmon Canapés (in 10 minutes or less)

How to make smoked salmon canapés
- Arrange the blinis (or mini-toasts) in a single layer on a microwavable plate so they heat evenly.
- Warm them in the microwave for about 40 seconds, just until soft and slightly heated through. Not lava hot — just supple.
- Spoon a small dollop of cream cheese onto each blini using a teaspoon, spreading it gently but keeping a little height in the center.
- Season with a light sprinkle of freshly ground black pepper over the cream cheese for a subtle kick.
- Slice the smoked salmon into small ribbons or bite-sized pieces.
- Top each blini with a few delicate folds of smoked salmon, placing them neatly over the cream cheese.
- Drizzle a tiny squeeze of fresh lemon juice over each canapé to brighten the flavors. Easy does it — you want lift, not a citrus bath.
- Warm the assembled canapés for another 30 seconds in the microwave to gently bring everything together.
- Serve immediately while soft and slightly warm. Simple, elegant, and gone in seconds.

For the cheese, I typically use fromage blanc, but any sort of cream cheese, such as Philadelphia, will do.
